Citric Acid

Citric acid is naturally found in citrus fruits, but it can also be manufactured. Industrial citric acid is primarily produced through fermentation or chemical reaction. The latter method is used in approximately 90% of global production and involves fermentation with enzymes and microbial strains, most commonly Aspergillus niger. Citric acid has the ability to help stabilize emulsions and prevents fat separation. The final product is available in powder or granulated form as anhydrous citric acid.
