...When Ferdinando Bagarani started the Mamma Maremma dairy, it was little more than a workshop producing mainly ricotta and a couple of varieties of caciotte. Over the course of half a century, the selection has been enriched with flavors and textures rooted in tradition and the uniqueness of the territory.
