W 270-290. Soft wheat flour Type '0'. ROUTE 36 is the ideal flour for Wheel Pizza and for all processes that require highly extensible doughs. Soft wheat flour Type '0' obtained from carefully selected grains among varieties that have an excellent content of soluble proteins and Glutenins. A skilled milling process can also regulate the amount and proportion of soluble and insoluble fibers to achieve benefits from both a nutritional and rheological perspective, that is, the plasticity of the doughs. Therefore, with Route 36, highly extensible doughs are obtained, which do not shrink or break and are easy to stretch.
