These are snails of the Helix Aperta species with their typical white operculum. It is a special snail and a delicious food throughout Puglia. One of the most common recipe is the following: the snails are washed, the operculum removed and left to soak in water. In a saucepan, sauté plenty of sliced ​​onion in extra virgin olive oil; then add salt, pepper, the snails and a few bay leaves. Cook over a high heat and when the oil begins to surface again, pour in a glass of rosé wine and let it evaporate. Season with salt and serve hot. Tocando Cielo Rosé wine is made with grapes from the winery’s estate, grown in accordance with the principles of integrated agriculture. The vineyards where our Grenache grapes lie are on average 20 years old and grow on rolling hills in stony, loamy-limestone soil in Olite village, in the middle of Navarra with Mediterranean and Pyrenean influence. The 2019 harvest was small in quantity, in particular when compared to the previous year. After a dry, cold winter and stormy spring, the summer was warm and didn’t have much rain, enabling complete and homogeneous ripening. Production is limited to 15,000 bottles.
