High-oleic sunflower oil is produced from special varieties of sunflower, which has a high content of the monounsaturated fatty acid Omega-9 (at least 75%) and a low content of the polyunsaturated fatty acid linoleic Omega-6. High-oleic oil is more resistant to oxidation, high temperatures and has a longer shelf life compared to ordinary sunflower oil. After enhanced filtration, sunflower oil becomes transparent, without extraneous odours and sediment. Less useful substances remain in the product but it becomes stable for storage and safe when heated, so it is suitable for frying.
