This is because they are produced using advanced infusion technology, though the process itself is easy to understand. We simply soak high quality, individually quick-frozen fruits in sugar syrup, under vacuum. This means that we don’t need to use pigment or preservatives. Our special processes ensure keeping the natural look, color and texture of the fruits in the best possible way, significantly enriching the natural aroma and taste. Freezing has been used for ages to preserve food. Thanks to this technology, we can prevent fruit decomposition or fermentation. Despite its advantages, traditional freezing has its limitations. The process is usually too slow, causing the formation of ice crystals which damage cell structure. So, once fruit is thawed, its original texture is lost. IQF stands for Individual Quick Freezing. This modern technology makes the freezing process very fast, decreasing the size of ice crystals formed inside fruit tissue thus reducing cell structure damage. This freezing process is possible thanks to a flow of air at a very low temperature that makes every piece of fruit float in the air getting individually frozen rapidly. IQF also improves freshness, taste and nutritional characteristics of fruits in comparison with a slow freezing process.

Turkey is the main producing and exporting country of dried figs. Turkey produces the 60-70% and and exports 75% of world’s dried fig. As Turkey is the world’s largest dried fig producer , Turkish figs are considered the highest quality in all fig growing countries with its high soluble solid and sugar content ,low acidity, light yellow skin and its amber colored inside. The edible fig is one of the first plants that was cultivated by humans. Figs are among the richest plant sources of calcium and fiber. According to USDA data for the Mission variety, dried figs are richest in fiber, copper, manganese, magnesium, potassium, calcium, and vitamin K, relative to human needs. They have smaller amounts of many other nutrients. Figs have a laxative effect and contain many antioxidants. Dried figs are consumed in World cuisines in many different forms such as inside bakery products, in jams, marmalades or in many confectionery products as a delicious ingredient.
