Known as the “Pearl” of mushrooms, the oyster mushroom has a very delicate flavor and cooks quickly, which makes it great for quick stir-fry’s or simple soups. Eaten raw, the mushroom has a slightly bitter and tangy flavor Due to its delicate nature, the oyster is one of the few mushrooms that does not need to be re-hydrated before cooking Added toward the end of the cooking process, oyster mushrooms pair well with white meats and seafood, stir fry’s and braising Description/Taste Dried Oyster mushrooms are generally small, averaging 2 to 5 centimeters in diameter, and are comprised of flat, shriveled, wrinkled, and slightly curled caps with little to no stems. Some Dried Oyster mushrooms are also cut and dehydrated into pieces, creating a mixture of different shapes and sizes. When dried, the mushrooms are brittle, delicate, and slightly leathery, appearing in light brown to pale grey shades.
