Organic Black Beluga Lentils, or “Lens esculenta,” are a rare and sought-after variety of lentils, averaging about half the size and a bit rounder than the standard type. Their natural ebony color makes them striking in appearance, and they also have high nutritional value. With an average of 24% protein, Black Beluga Lentils are believed to have the highest protein content of all lentil varieties. They are ideal for use where a high-contrast lentil with sturdy structure is desired, such as in salads, as a stuffing for vegetables or as a topping for hors d’oeuvres

Organic Brown Lentils (Lens esculenta), sometimes called “Spanish Pardina,” are one of the most common varieties of lentils. They are a bit smaller than other lentils and a bit firmer and are excellent at holding their shape during long cooking times.

Organic Green Lentils (Lens esculenta) are a standard variety of lentils that are firm and exceptionally good at holding their shape. While they generally take the longest to cook of the lentil family due to their sturdy structure, they are still relatively quick.

They have a deep green color with subtle, beautifully mottled patterns and a robust, peppery flavor. Often regarded as the most desirable and delicate of the lentils, they originated in the volcanic soils of the Puy region of France, and are now often grown in North America and Italy as well

Whole Red Lentils are 1/2 cm wide with a mild, earthy flavor and soft texture. These lentils are crimson, which is a deep orange-red color. Whole Red Lentils have traditionally been used as a meat substitute.
