The local currant (peyi in Martinique) is the calyx of the hibiscus flower. It makes a wonderful jam, but also a very refreshing and thirst-quenching drink with a tangy taste. Its red colour and fruity flavour make it an excellent ingredient for your macerated arranged rums.

Dog" sauce is a blend of spices that is a staple of West Indian Creole cuisine. A mild sauce. Made with onion, parsley, garlic and chilli. Dog" sauce goes well with all grilled fish dishes, lobster, shellfish, meat and poultry.
