In a crossflow filtration the filter-surface is a semipermeable membrane. The liquid passes through the membrane and across of it. Thus keeps it clean. Used for wine, fruit fermented, mead, beer. The membranes used by Bared do not create any mechanical resistance: are delicate on the product and do not increase its temperature. Filtration with Bared systems guarantees the brilliant and sterile product in one passage compared to other systems that require more filtration stages with resulting in greater stress on the product.

Ionic exchange polymers, when in touch with a solution containing salt compounds (i.e. ions), exchange certain ions with other ions having the same electric charge. In particular, potassium ions can be exchanged with hydrogen ions which will create a new tartaric acid molecule. Moreover, other ions, such as calcium, iron and copper, are partially exchanged. This treatment lowers the pH giving added protection against bacterial attacks (for example rettanomyces) which could generate anomalous fermentations.

Tube Bundle Cooler for heating or cooling of low-viscosity media with a low solids content (e.g. must recooling, system separator for vegetable cooling baths, pre-cooling for spirits filtration). The heat exchanger consist of several small tubes, through wich the product flows. The several small tubes are inside a bigger shell tube and welded. Through the shell tube flows the cooling- or heating medium in counterflow to the product.

Amiral de Beychevelle is the second wine of Château Beychevelle and sold on exclusive basis by Barrière Frères. The Helicoid monotube heat exchanger, operating by means of counterflowing cooling or heating fluids, has an exceptionally high heat exchange coefficient, due to the special corrugated profile of the two concentric stainless steel pipes. This considerably reduces the exchange surface compared with conventional smooth pipe heat exchangers. A wide range of original applications are available. This is the only tubular heat exchanger for the homogeneous cooling or heating of grape mash (with or without stalks), fruit pulp and other products containing suspended solids or fibres (up to 25-30%). It is therefore ideal for: • in-line chilling of white grape mash at 15°C, to prevent fermentation before pressing • instantaneous chilling of black grape mash at 25°C • black grape mash fermentation control by means of by-pass circulation. Ideal for wine producers who wish to maintain uniform quality unaffected by the vagaries of the climate, the technique is used to carry out oenological practices especially suitable for enriching sugar and maintaining the right balance of components in the must to ensure that the wineís typical features remain unaltered. Application of this technique is particularly successful with must from red grapes as it produces wine with enhanced tannin content and a richer colour. An efficient scraped heat exchanger is used in the final stages of the process and reduces the temperature of the concentrate to an optimum value, either for storage or for immediate addition to the mass.
