Its color varies from light to yellow-lemon. The collection of acacia honey lasts only a couple of weeks a year, in mid-May. Immediately after pumping, such honey is slightly thicker than drinking water. One of its features is that acacia honey does not crystallize for a very long time. This is due to the increased content of fructose in it and reduced content of sucrose. It makes this type one of few varieties of honey suitable for the diet of diabetics. Acacia honey has many healing properties. With its constant use metabolism and hematopoiesis improves, hemoglobin in the blood increases. Acacia honey is known for its antiseptic and antimicrobial properties.

Ab Vinea Doni, from the Latin "Doni dal vigna", comes from a handpicked selection collected in the vineyards of San Gimignano the wine is made with Vernaccia di San Gimignano DOCG and a small percentage of Chardonnay grapes. Fermentation and aging take place in small 225l French oak barrels for approximately 4 or 5 months; once bottled, Ab Vinea Doni completes its refinement for another 4 months before leaving the Casale Falchini cellar. The character of the wine is emphasized by the long contact with oak wood, enhancing its fragrance and softness; it is an elegant and longlived wine. The Ab Vinea Doni wine from Casale Falchini keeps well in the bottle, so it can also be served 5 years after the harvest. The wine, obtained from Vernaccia di San Gimignano DOCG and from small doses of Chardonnay, has a deep and bright yellow straw color; the aroma is fine, with notes of vanilla, tropical fruit and sweet spices; the taste is dry and soft, with hints of acacia and almond honey.
