Thanks to the handpicked selection of Malvasia and Trebbiano grapes from Podere Casale I °, harvested and left to naturally dry for approximately three or four months after the harvest, an excellent Vin Santo DOC Riserva di San Gimignano is born. The lightly dehydrated grapes are then pressed and the juice is transferred in small barrels, made with various types of woods from different regions of the world; here it is left to rest for at least 48 months.
