The Rock 21 is designed to cut cheese into a programmable number of discs. The discs can have a fixed or variable thickness, according to production needs. The machine can be programmed both for the cut in half of the shape and for its subdivision into discs, with variable height. It also offers the possibility of removing the upper and lower plates from the rind, without creating waste, and preparing the cheese for packaging. The centering of the cheese takes place vertically and, if necessary, it is possible to extract the central part of the wheel with a customizable diameter, to subsequently obtain pieces of particularly reduced weight.
