These are snails of the Helix Aperta species with their typical white operculum. It is a special snail and a delicious food throughout Puglia. One of the most common recipe is the following: the snails are washed, the operculum removed and left to soak in water. In a saucepan, sauté plenty of sliced onion in extra virgin olive oil; then add salt, pepper, the snails and a few bay leaves. Cook over a high heat and when the oil begins to surface again, pour in a glass of rosé wine and let it evaporate. Season with salt and serve hot.
