Arrowroot was already being cultivated by humans 11,000 years ago. Arrowroot is also the name of the easily digestible starch from the rhizomes. Arrowroot Powder is an excellent binding agent for creamy sauces and glaze with neutral taste. The Cultivation of Arrowroot The rhizomes are harvested one year after planting. They contain about 23% starch. They are first washed and then stripped of the papery skin. They are then washed again, dried and ground into a pulp.
