Saint Emilion Grand Cru Blend: Merlot - Cabernet Sauvignon - Cabernet Franc Ageing potential: Approximately 20 years Vinification : Harvested by hand, the grapes are destemmed and then sorted by densimetric bath. This is followed by a week's pre-fermentation cold maceration and 10 days' alcoholic fermentation, during which the grapes are pumped over and the cap punched down. The wine is run off and then pressed before ageing for 15 months: 60% in new barrels and 40% in temperature-controlled stainless steel vats.
