We take care of the natural decantation of the oil, without forcing its filtration, and store it in a clean, quiet cellar with stable temperatures.
...towards the end of autumn. The olives undergo a first pressing to extract their juice. The quality of the oil largely depends on the subsequent processing. The olives are cleaned, sorted, and washed with cold water. They are then transported to the mills, where the oil is extracted by pressing. All of this is processed within 24 hours of harvesting.
