La historia de Aceite Rey Don Jaime empieza en 1940, en la ciudad de Valencia. Los olivares desde los que se realiza nuestra producción de aceite de calidad se encuentran en la provincia de Alicante (1). Las horas de sol y la fertilidad propias de sus tierras aporta el aroma y el sabor único de los Aceites de Oliva Virgen Extra. Nuestras oficinas están situadas en Almussafes (2), Valencia. PRODUCCIÓN Por la recogida selecta de los frutos directamente del árbol, su molturación inmediata a temperatura ambiente sin aditivo alguno, la utilización de acero inoxidable en todo el proceso de extracción, y el estricto control higiénico, conseguimos un auténtico ZUMO DE ACEITUNAS sano y natural. El aceite se extrae de aceitunas maduras, de entre seis y ocho meses, escogiendo el instante en el que poseen el máximo nivel de ácidos grasos en la pulpa, hacia finales de otoño. Las aceitunas se someten a una primera presión con el objeto de extraer su zumo. La calidad del aceite depende en gran medida del procesado posterior. Las aceitunas se limpian, criban y lavan con agua fría. Más tarde se transportan a las almazaras, en las que se extrae el aceite prensándolo. Todo esto se procesa en las 24h. siguientes a su recogida.

Making lemoninfused olive oil is extremely easy, you just have to remove the outer covering of lemons and place them in a cream whipper with some olive oil. After you have recharged your whipping siphon once, you will then need to shake it a few times and leave the mixture as it is for 5 minutes during which the lemon will get infused in olive oil properly and it will then be ready for use. 1 large lemon 1 cup of olive oil
