...Currently, the "José María" restaurant has a team of 65 employees covering all departments: kitchen, dining room, bar, cleaning, maintenance, and administration. It features eight unique dining rooms, as they like to call them, a reception bar, two individual kitchens, stoves, cold storage rooms, and four roasting ovens. Today, the restaurant is regarded by critics and gourmets as a classic of Segovian cuisine, both a continuer and an innovator in the rich gastronomic tourism that Segovia treasures.
