On a 500-acre property with rich natural vegetation in the Meligalas area of Messinia, you will find the donkey milk production unit of Mrs. Triantafyllia Iliopoulou. The donkeys in our unit are free to move and graze on our private lands. Our animals are regularly checked by a veterinarian, and samples of the produced donkey milk are sent for chemical and microbiological analysis.

When the paste was ready (at the discretion of the responsible parties), it was transferred to special bags called mutafias or tsolias. These were placed in a press with a screw, commonly known as a 'screw', which pressed them, thus extracting the oil. The screw was rotated manually. Later, hydraulic presses were used.
