The olives are taken to a certified mill run by two true artisans. They use only purely mechanical means to obtain very high-quality extra virgin olive oil. The olives are pressed within 12 hours (at most) after harvesting to avoid any artificial ripening. Once obtained, the olive oil is stored in metal containers for optimal protection.
