For the past hundred years, almost all of the thousand Polynesian Vanilla growers have no longer prepared their own vanillas (drying); they pick them and sell them to the few preparers active in the territory. The result is that each preparer obtains vanilla from at least one hundred planters spread out over the entire archipelago. All of the vanilla from the various plantations and islands are thus mixed together and prepared at the same time. Once the notion of terroir was abandoned, the vanillas were no longer distinguishable. Only fruit which has reached full maturity(dark brown color) is selected, a selection process identical to that used with grapes for “Vendanges Tardives ” and the “Sélections grains nobles” fines Alsace wines. This very late harvesting process, unique in Polynesia, makes it possible to enhance the taste and aromatic qualities of Tahitian Vanilla.

The grapes are harvested by hand. For this Cuvée, we only use the first presses only the first pressings of our best vintages. The wine is matured in vats only during the first alcoholic fermentation. for about 3 months, followed by bottling with our second fermentation second fermentation to create fine bubbles. The wine is then aged on laths for a minimum of 1 year for optimum quality. Food and wine pairing : The Blanc de Blancs is an ideal accompaniment to aperitifs or simply grilled fish. simply grilled fish or roast veal with olives. Aromas & Flavours : This Crémant de Bourgogne has a light golden colour with fine bubbles. with notes of citrus fruit. Lemon and lime dominate and bring a lovely freshness to the palate. freshness on the palate. The minerality provided by the grape varieties planted in clay-limestone soil, gives this wine a solid complexity that will appeal to those who like to discover new things.
