The orecchiette buononaturale are semi-artisanal made by bronze drawing, with simplicity and passion, in the fertile province of Irpinia, in southern Italy. The dough, made from durum wheat semolina and water, is designed to withstand cooking as best as possible.
Our dried pasta undergoes an average of 30 hours of drying at a maximum temperature of 50 degrees Celsius and is then left to rest for about 12 additional hours in the now-turned-off drying units.
Thanks to its rough and thick surface, this pasta shape tends to trap seasonings and sauces, thereby enhancing most of the base flavors.
