Tahini is a roasted sesame paste that is very popular in the Middle East. We are gaining increasing popularity due to its high content of nutrients, vitamins, and minerals. It is used to prepare chickpea paste called hummus, baba ghanoush (an eggplant dish), halva, tahini sauce, dips, and serves as an addition to cakes and desserts. Sesame seeds contain vitamins: A, B1, B2, B3, B6, B9, and E, as well as large amounts of zinc, phosphorus, magnesium, manganese, copper, potassium, sodium, calcium, and iron. They contain proteins and fibers, healthy unsaturated fatty acids, and antioxidants. Sesame seeds contain two unique substances: sesamin and sesamolin. Both belong to lignans, which have cholesterol-lowering properties. Sesamin is also an antioxidant that protects the liver.
