Agar, also known as Agar-Agar, is a natural thickening agent of plant origin. It is derived from seaweed - Krasnorostów. Agar has no odor or taste. It contains many valuable ingredients such as manganese, magnesium, iron, calcium, sodium, and zinc. It is a stronger gelling agent than gelatin. On labels, we find it under the symbol E-406. It is used in vegan cuisine as a substitute for gelatin. It dissolves at 85-95 degrees Celsius, while it thickens at 32-35 degrees. Therefore, you do not need to refrigerate it. To achieve the average gel firmness, a ratio is used: 1 flat teaspoon of agar per 1 cup of liquid. Dissolve agar in a small amount of cold water and add it to boiling water, cooking for a few minutes. Agar can also be used to make jam. For 1.5 kg of fruit and 500 g of sugar, add 1-1.5 teaspoons of agar.
