These are snails of the species Helix Aperta with their typical white operculum. They are highly sought after and considered a delicious food throughout Apulia, featured in numerous traditional dishes. One of the most common variations is as follows: the snails are washed, the operculum is removed, and they are soaked in water. In a pot, sauté plenty of sliced onions in extra virgin olive oil; then add salt, pepper, the well-drained snails, and a few bay leaves. Cook over high heat, and when the oil starts to rise to the surface again, pour in a glass of rosé wine and let it evaporate. Season with salt and serve hot.
