Product made from the front limb of adult pigs subjected to the corresponding salting and curing-maturation process. The Brisa Iberian Pigs The Brisa Iberian pigs have unique characteristics that set them apart from others, resulting in top-quality Iberian products. They are specimens with a genetic history, originating from a Mediterranean subspecies of Sus Scrofa Mediterraneus, native to the famous Spanish dehesas, primarily located in Salamanca. The Salting Process At Ibéricos Brisa, all pieces are covered with sea salt to promote dehydration and preservation, thus contributing to the development of the typical color and aromas of cured products. They remain in the salting chamber for one day for each kilogram of fresh piece weight, at a controlled temperature between 3º and 5º Celsius, and with a relative humidity between 75% and 85%.
