Produced in April, this is a honey that crystallizes. In its liquid state, it ranges from almost colorless to straw yellow; upon crystallization, it takes on a hue that sometimes veers into pearly white and other times into light beige. Its characteristic scent, fresh and floral, evokes the flowers of orange blossom. The aroma is fruity, of medium intensity, and on the palate, it is quite persistent. PAIRINGS A pleasant sweetener for beverages, yogurt, and desserts, it can be enjoyed with sweet cheeses and stretched curd cheeses like mozzarella, provola, and caciocavallo. It pairs well with both raw and cooked fish; with extra virgin olive oil and lemon, it enhances dressings for salads and crudités.
