It is less common in other parts of Africa, in France, in the Sicilian province of Trapani (Fregola), in Israel and some regions of the Middle East. Outwardly, couscous is similar to millet groats, its basis was historically wheat, although depending on the region, couscous was also prepared from millet, rice or even barley. The basis of modern couscous is semolina, which in turn is made from durum wheat.
