...Acid whey powder (AWP) is a byproduct of cheese or acid casein production. It is produced by drying fresh whey obtained from soft white cheese. Through microbial fermentation, the pH of the milk is reduced and lactose is converted into lactic acid. Acid whey powder is primarily used for the production of ricotta and whey butter. It is also used as an ingredient in many processed foods, e.g., bread, crackers, pastries, ready meals.
