...-Cher. As soon as the fruits arrive at the workshop, we prepare them to preserve their freshness as much as possible. We start in April and May with strawberries, followed by rhubarb, then apricots (which come from the Brunet farm in Roussillon), and then pears and apples, as we enjoy working with the seasons. In winter, we have plenty of time to make lemon, orange, and mandarin marmalades. Then comes the time for pineapple in January.
