Everyone has their own Proust's madeleine; for us, we have several rather than a whole pack of madeleines. Among the many treats that made our childhood sweet was the famous honey from Uncle Louis. Uncle Louis and his honeys, produced in Lauragais, were inseparable. Today, he is unfortunately no longer here to tend to the hives, but he would undoubtedly approve of this honey that resembles his own. This exceptional honey is produced in Lauragais, between Toulouse and the Mediterranean.
