SAS VENTOUX EPEAUTRE is a producer of 100% French spelt - the production is carried out in a traditional manner. The company produces and collects spelt in the region that is the cradle of this cereal (around Mont Ventoux, Alpes de Haute Provence, Drôme, Vaucluse). Spelt is cultivated in rotation with aromatic plants or fodder, thus requiring no inputs. This allows for a completely natural production. After each harvest, the storage of the seeds takes place in silos, without any additives. Next is the hulling stage, which simply involves removing the outer skin of the grain. To best clean the production, a suction system removes the chaff and anything lighter than the grain. Sorting machines will remove anything longer or shorter than the grain. Finally, an optical sorter will precisely remove the last unwanted grains. A quality control is necessary to check the cleanliness of the grains. Once all these cleaning and verification steps are completed, the grains are ready for consumption, and then for processing, particularly into flour.
