LES VENDEENNES DU LARGE

Located in the heart of the Bourgneuf Bay, our production spans 6 hectares of carefully arranged oyster parks to take advantage of the region's specificities. Thanks to our expertise, we adapt our techniques according to the conditions: a calm bay for raising our young oysters, and more exposed areas for their fattening and optimal finishing. Our oysters are rigorously sorted, graded, and refined at our site in Polder des Champs in Bouin, ensuring exceptional quality at every stage. This pursuit of excellence relies on a passionate team, where the experience of the elders is passed down to the younger ones, bringing dynamism and innovation to our traditional know-how. We offer our oysters, including the "Fines de claire" and "Spéciales de claire", for direct sale, and we also ensure delivery throughout France, meeting the needs of large retailers, restaurateurs, and corporate committees. All our oysters are carefully refined in "claire" in basins dug into the clay, nourished by seawater. These basins provide a unique environment, distinct from that of the open sea: the water is less salty and richer in phytoplankton. This particular environment helps to reduce the intensity of the briny taste of open sea oysters while fully revealing the richness of their delicate flavors.
