What is sumac? It is a raw spice, simply ground. It comes from a shrub that produces red clusters containing small seeds. These seeds are ground to create this naturally salty, lemony, and vinegary spice. Sumac is an astringent spice, meaning it gives the sensation of tightening the mouth. Be careful, there are trees of the same family in France and Europe called "poison sumac": this one is toxic! Usage: We recommend using sumac as a condiment. Therefore, we advise against cooking it so that it retains all its properties and flavor. Sumac is used like fleur de sel, sprinkled over a dish.
