The Piper nigrum is a vine with oval leaves that grows 4 to 5 meters high, flourishing around Kampot in the Phnom Voar mountains. It thrives in porous laterite soil, on the heights of small hills swept by the sea winds from the nearby Gulf of Thailand. The fruit of this tree is harvested in clusters at different stages of ripeness. Black pepper is picked when green, then dried and naturally oxidized, and finally sorted by hand. White pepper is also harvested when green, then soaked in clear water, allowing the epicarp (skin) to detach, thus preserving only the core of the berry.
