Sophonis olive oil is a cold-pressed oil, extracted solely through mechanical means. Our oil is quite unique and stands out for its very smooth taste and extremely low acidity. It also has a distinct fruity flavor with a slight aroma of young olives. The oil holds up very well to cooking and develops a whole range of flavors. Whether consumed in salads or drizzled at the end of a meal, it enlivens and enhances the character of the dish. Inhabited by Berbers since prehistoric times, it was the focal point of the revolt against the Aghlabids in the 10th century, which led to the establishment of the Fatimid dynasty. During the Ottoman period, it also served as the base for the Barbarossa brothers. Known for its long sandy beaches that contrast with a very rugged coastline called the Djijelienne corniche. Considered a key hub for fruit and vegetable production in Algeria, it particularly stands out in olive production.
