Monosodium glutamate (MSG)

Monosodium glutamate, commonly known as MSG, is the sodium salt of glutamic acid, one of the most abundant amino acids. MSG is obtained through the fermentation of starch, sugar cane, sugar beet, or molasses, but it is also found in seaweed, many vegetables, cheese, and mushrooms. MSG contains a single amino acid derived from glutamic acid and is not considered a complete protein source. It is also insoluble in common organic solvents and is not hygroscopic. It responds well to processing as it does not decompose when cooked. When subjected to high temperatures in the presence of sugar, it turns brown. It is typically found as a mono-hydrate, a white crystalline powder, odorless, and soluble in water.
