"This is a fungus that comes directly from nature, renowned for its aromas and flavors, to be added directly to foods. Truffles are a subterranean fungus that grows near the roots of certain trees, referred to as truffle species, such as oak or holm oak. They are found about 20 cm below the surface. There are up to thirty edible varieties of truffles, though not all have culinary value. One of the most important is the winter truffle, Tuber Melanosporum, which has a rough texture, a round shape, and usually weighs no more than 200 grams. Its exterior color ranges from brown to black, depending on its ripeness, and the inside is black with fine whitish veins (gleba). Tuber aestivum (summer truffle), Tuber uncinatum (autumn truffle), Tuber melanosporum (winter truffle), and Tuber magnatum (white truffle).
