At Castro y González, we prioritize the care and sustainable development of this source of life and are aware that each of the streams, oaks, cork oaks, plains, and springs in our dehesas are fundamental parts of our Iberian products. At Castro y González, we combine the ancestral knowledge of four generations with the projection required by the modern company of the 21st century. The formula that allows us to maintain the success achieved by our ancestors has been, is, and will always be the same: love, care, absolute dedication, and total obsession with quality. All our processes are artisanal and have been adapted and improved for competitiveness without forgetting everything we learned from our grandparents over the years. Currently, positioning in new markets, innovation, and customer-focused service constitute the pillars of the path laid out for a very promising future. Our Jamón de Bellota Ibérico has been aged in our cellars for a minimum of 48 months. It is recognized by its elongated shape with a dark and worn hoof, as a result of the two montaneras that our specimens undergo in the dehesa.
